Vegan Recipe

Kaanda Matar (Peas and Onions)

Ingredients:

  • 50g vegetable ghee
  • 1 tbs cumin seeds
  • 1 large onion, thinly sliced
  • 2 cloves of garlic, crushed
  • 1/2 tsp dried fenugreek
  • 1/2 tsp chilli powder
  • 500g fresh or frozen peas
  • salt

Method:

Fry cumin seeds in vegetable ghee until they change colour. Add onions, and fry gently until soft and transparent. Add garlic and spices, cooking for one minute. Stir in the peas, cover, and cook on a low heat for 15 minutes, stirring frequently.

Excellent with plain basmatti rice, and a tomato and onion salad.
