Pour the 'yoghurt' onto a square of muslin, or a clean tea-towel.
Tie together the corners, and hang up overnight over a bowl or sink.
A great spread for sandwiches; try mixing in chives, fresh herbs, or
other flavourings.
Can also be used for cheesecakes, and as a replacement for cream cheese,
ricotta, or paneer, in a wide variety of recipes.
